Negombo Style Modha (Barramundi) Curry

INGREDIENTS

  • 200g Muhudu Modha (Barramundi)
  • 3 tbsp Cooking Oil
  • 1 Stalk Lemongrass
  • Curry Leaves and Rampe
  • 2 Pods Cardamom
  • 3 Green Chillies
  • 1 Big Onion
  • 1 Stick Cinnamon
  • 1/2 tbsp Salt
  • 2 1/2 tbsp Roasted Curry Powder
  • 1/2 tbsp Pepper Powder
  • 1 tbsp Chilli Powder
  • Roasted Grated Coconut
  • 1/2 Cup Water

METHOD

  • Heat Cooking Oil in a pan, Add Lemongrass, Curry Leaves and Rampe then saute for few seconds. Then add Cardamom, Green Chillies, Onion, Cinnamon 1/2 tbsp Salt. MIX MIX MIX! Add the Roasted Curry Powder, Pepper and Chilli Powder. MIX MIX MIX!

  • Now add the Roasted Grated Coconut and mix it well with the rest of the ingredients. Then add 1/2 cup of water, mix it well and let it simmer. Fish Time! Add 200g Muhudu Modha, Place them evenly across the pan and flip them gently so that the pieces are covered with the spice mixture. Let it cook for about 3 – 5 minutes and Voila! Serve with Steamed Rice.
