Mediterranean & Barramundi Stew

INGREDIENTS

  • 200g Muhudu Modha
  • 1 tbsp Olive Oil
  • 1 tbsp Salt
  • 2 Cloves Garlic
  • 25g Big Onion
  • 25g Fennel
  • 1 Tomato
  • Tomato Puree
  • 1/2 Cup of Water
  • Bay Leaf
  • Rosemary
  • Star Anise
  • Orange Peel

METHOD

  • Heat Olive Oil in a Pan. Add Salt & place the filets. Saute the Barramundi filets skin down until it crisp. Turn over & remove the filets from the pan.

 

  • Add chopped onion, fennel & garlic to the pan and let it fry. Then place the filets on pan & add some chopped tomatoes. Add Tomato Puree & 1 cup of water and let it simmer. Add Bay Leaf, Rosemary, Star Anise & Orange Peel. Cut potatoes into small cubes & add to the pan and let it simmer for 10 min
