Mediterranean & Barramundi Stew
INGREDIENTS
- 200g Muhudu Modha
- 1 tbsp Olive Oil
- 1 tbsp Salt
- 2 Cloves Garlic
- 25g Big Onion
- 25g Fennel
- 1 Tomato
- Tomato Puree
- 1/2 Cup of Water
- Bay Leaf
- Rosemary
- Star Anise
- Orange Peel
METHOD
- Heat Olive Oil in a Pan. Add Salt & place the filets. Saute the Barramundi filets skin down until it crisp. Turn over & remove the filets from the pan.
- Add chopped onion, fennel & garlic to the pan and let it fry. Then place the filets on pan & add some chopped tomatoes. Add Tomato Puree & 1 cup of water and let it simmer. Add Bay Leaf, Rosemary, Star Anise & Orange Peel. Cut potatoes into small cubes & add to the pan and let it simmer for 10 min
